These banana and blueberry muffins filled with our lucious Passion Fruit Curd are not only delicious but they're secretly healthy too! 


  • 1 ripe banana
  • 1 cup self raising flour
  • 1/2 cup brown sugar
  • 1 cup soya milk
  • Handful of blueberries
  • 6 TSP Passion Fruit Curd
  • 1 tbsp coconut oil

1.Mix all ingredients apart from the Passion fruit curd together. 2. Fill 1/2 of each muffin case with the batter.

3. Place a teaspoon of Passion Fruit Curd in the centre of each case.

4. Top with the rest of the batter  and sprinkle a bit of brown sugar on each muffin.

5. Bake in a preheated oven (180°c) for 30 min.

6. Remove from oven and leave to cool for 15 min before taking muffins from cases.
